Attention coconut lovers… highlighted here are some of the best coconut recipes and photos I could find. Of course, many more exist than what I could reasonably feature here. If you search coconut on the WP reader you will see a wealth of great photos and recipes. Enjoy!
This first recipe reminds me of my childhood… my mother used to make something similar for us to eat. Later I learned to make them myself. Sniff, sniff, yum!

2. COCONUT SUMMER SALAD on Nourishing Amy

3. COCONUT PUDDING WITH MANGO SALSA on things we make

4. VEGAN CHICKPEAS AND COCONUT CURRY on Travel Food Art

5. MIXER COCONUT ICE CREAM on a common connoisseur
Coconut ice cream… yum… and you don’t even need an ice cream maker!

6. BASMATI RICE WITH COCONUT AND PEAS on My Favourite Pastime
I liked this recipe as it seemed like such a simple and delicious side dish to make.
7. RASPBERRY COCONUT CHOCOLATE CUPS on what luce eats
Pure and simple… yum!
8. COCONUT WATER MOJITO on Masala Mojo
And, last but certainly not least… this sounds awesome!

Happy eating!

Looks really delicious. As a person who lives in a country where there are coconut trees in every backyard, this is lovely. We also use a lot of coconut in our daily cooking.

Oh how nice. π
Even though there are lots of palm trees in Orlando one has to go further south in Florida to find coconut trees.

Oh yes, JoAnn, definitely coconuts! Countless ways to savor it too – there’s shredded coconut, toasted coconut, coconut oil, coconut milk, coconut cream… You’ve released my Bubba Blue!
Upcoming soon is coconut rice to accompany a Jamaican dish, coconut milk in just about all the Thai cuisine I prepare, coconut cream in a dessert or two. Sorry, Bubba again.
Your own collection ends, appropriately enough, with mojitos. Awesome culinary tour, JoAnn!

Funny I should see this post today. Earlier I discovered that Vita Coco, my former favourite coconut water brand has started adding sugar to their products. Time for me to search for a new favourite. I still love coconut, just not their coconut water.

Oh wow. Well hopefully you can find one without sugar. π
I really like body armor, which has a little bit of coconut water. Not sure if it has sugar though. They are very good so maybe.

JoAnn, in southern part of India coconut is used extensively in daily food preparation. But the variety you have presented here is so wonderful. I am sure trying a few of them!!

Yes, I just adore coconut curries. The best Iβve had is when Iβve been invited to my Indian friends homes for dinner. Homemade seems to be hard to beat when it comes to such things. π
